Ingredients
17 oz/500 gground pork meat mince
2tbspbread crumbs
2 tbspmilk
1 egg
salt, pepper
1 tsppaprika powder
1tspnutmeg powder
5 oz/150 gbacon
2garlic cloves
1 cup/250 mllight whipping cream (contains between 30 and 36 percent of milkfat)
3 cup/750 mlchicken or vegetable broth
1tbspfinely chopped herbs of choice(parsley, basil, dill, oregano, chives)
10 oz/300 gpasta
2,3tbspolive oil
Instructions
Place the minced (ground) meat in a bowl and season with salt and pepper. Combine all the ingredients, using your hand.
Mix breadcrumbs with milk until the bread becomes soggy and will have the consistency of wet sand.
Combine ground meat with egg, breadcrumbs, spices, and grated garlic until all ingredients are well blended. Shape meatballs. Form meatballs slightly larger than walnuts. Put some flour in a separate bowl and coat the meatballs in flour.
Heat the oil/olive oil in the pan and fry the meatballs. Fry for about 2 minutes on each side. I recommend only browning the meatballs in the pan. This trick will create a lovely texture on the outside of the meatball. The middle of the meatballs will remain soft and undercooked (they will be ready to eat after cooking in the sauce).
Boil the broth in a large pot. Put the meatballs in the pot and bring them to a boil. Cover and cook for about 20 -25 minutes, in the meantime, stir the meatballs at least once.
While meatballs are still cooking you may want to prepare the bacon. I had small bacon pieces, which were sold separately in my local store, so I didn’t have to chop them. If you have a whole piece o bacon cut it into smaller pieces. Heat a pan over medium heat. Add the bacon and cook, stirring occasionally until the bacon is ready, brown, and crispy.
Add the cream to the broth and stir. Cook uncovered for a few minutes until the sauce thickens. Season with freshly ground pepper, nutmeg powder, and salt if needed. Add chopped herbs.
Note: If the broth is salty enough you don't have add more salt.
Meatballs with bacon in the sauce are ready. You can combine them with your favorite pasta, rice, or fried potatoes.
Notes
The sauce has a light, not too-thick consistency. This is not your typical thick creamy sauce that is often used for pasta.
