Pork Meatloaf with Delicious Glaze!

American-style meatloaf is typically made with beef or a mixture of beef and pork, but less often with pork alone. I decided to make this loaf with pork, as is more common in my family, and probably in most Polish homes. To prepare the loaf, I used several interesting additions that will greatly enhance the overall flavor. Pay attention to the ketchup-based sauce, which is very important here, so be sure to stock up on your favorite ketchup.

The ingredients you need to make a delicious pork meatloaf 🙂 ♥

GROUND PORK – When selecting ground pork for meatloaf, look for meat with a good balance of fat to lean ratio, around 80/20 is ideal. This ensures a moist and flavorful meatloaf. Additionally, choose freshly ground pork for the best taste. If possible, ask your butcher for a custom grind. Pay attention to the color, which should be a pale pink, and avoid any meat that appears gray. Always opt for high-quality, responsibly sourced pork to elevate the overall taste of your meatloaf.

This recipe is quite flexible, and you can easily substitute ground pork with beef or a beef-pork blend.

The remaining ingredients:Milk, eggs, Asian Panko breadcrumbs or regular breadcrumbs (your choice), ground sweet paprika, salt and pepper, parsley, Italian herbs or oregano, your favorite tried-and-true ketchup, onion, garlic cloves, and one of the following sauces of your choice: dark soy sauce or Worcestershire sauce.

GLAZE INGREDIENTS: Good Ketchup (ketchup is the key component of the glaze, so choose one that you like), followed by brown sugar, granulated garlic, and the ‘tangy’ element, which can be either lemon juice, apple cider vinegar, or wine vinegar.

How to make pork meatloaf… Step by step.

STEP 1. Place the ingredients in a bowl

In a bowl, place ground pork, add eggs, pour in milk, and add Panko breadcrumbs or, if you prefer, regular breadcrumbs. Add Italian Herbs or Oregano, finely chopped parsley, grated or pressed garlic, finely diced onion, two heaping tablespoons of ketchup, sweet paprika, as well as salt and pepper to taste. Also, include a tablespoon of dark soy sauce or Worcestershire sauce—choose any sauce you like. As for salt and pepper, I added a teaspoon of salt and 1/3 teaspoon of pepper, but you can use different proportions.

STEP 2. Mix all the ingredients.

Mix all the ingredients and transfer the meat to a loaf pan. Stir until the ingredients are well combined, but don’t overmix to prevent the meatloaf from becoming too dense. I used two smaller pans, but you can use one larger loaf pan. Smooth the mixture with a spoon and place the loaf pan in a preheated oven at 375°F (190°C) for the first 40 minutes. Meanwhile, prepare the sauce.

STEP 3. Prepare the glaze.

In a separate bowl, mix together all the sauce ingredients, including ketchup, brown sugar, garlic powder, pepper, salt, and the ‘tangy element’ – either lemon juice, apple cider vinegar, or wine vinegar. Ensure all ingredients are well combined. After the initial 40 minutes of baking, open the oven and carefully and evenly spread the glaze over the meatloaf. Close the oven and continue baking for an additional 20 minutes. So, the total baking time is 60 minutes.

STEP 4. Allow the meatloaf to rest.

After removing it from the oven, let the pork meatloaf ‘rest’ for 10 minutes. Juices may release during baking. You can use these juices to drizzle over, for example, mashed potatoes, which is a great side dish to serve with pork meatloaf. Enjoy your meal!

  • 2 lbs/1 kg ground pork meat
  • 1 medium-sized onion, finely chopped
  • 3 cloves of garlic
  • 2 large eggs
  • 2 heaping tablespoons of your favorite ketchup
  • Parsley, finely chopped
  • 1/3 cup of milk
  • 2/3 cup of breadcrumbs or Panko breadcrumbs
  • 1 teaspoon of salt
  • 1/3 teaspoon of pepper
  • 1 teaspoon of Italian Herbs
  • 1 teaspoon of sweet paprika powder
  • 1 tablespoon of dark soy sauce or Worcestershire sauce
