This delicious chicken breast in a sticky aromatic Asian-style sauce was a big hit at Sunday dinner. My dad, who eats mostly pork, asked for more. Even my mom, who doesn’t like spicy flavors, said that this dish has a balanced flavor and is great.

And yes, these sticky honey gochugaru chicken breasts have a balanced taste. It is a great combination of sweet honey, salty soy sauce, the strong flavor of tomato paste, and the spicier taste of Korean chili flakes, i.e. gochugaru.

The chicken pieces are soft inside and slightly crispy on the outside. But the sauce is the real star of this dish. The sauce is sticky, and aromatic, and has an outstanding balance of flavors. Ginger and garlic add extra uniqueness to this dish.

But the unique ingredient in this Asian-style chicken breasts is the Korean spice “Gochugaru”…

What is Gochugaru?

Gochugaru, also known as Korean chili powder is chili powder or flakes used in Asian cuisine.  It has an intense, beautiful red color. But the texture of this spice may vary. Comes in powder or flakes. I use flakes almost every time.

! Gochugaru is spicy, but not as spicy as cayenne or habanero pepper. It has a smoky, exciting, and unique taste, and, depending on the type and method of drying, it is available in several spiciness variants!

Make sure you’re using high-quality ingredients.

Chicken Breasts – you will need boneless skinless chicken breasts from an honest seller.

Garlic – garlic has a unique, pungent flavor and for many is an essential ingredient in the kitchen

Ginger – ginger adds an aromatic accent to the dish and it’s commonly used in Asian recipes.

Olive Oil/ Vegetable Oil – oil for frying the chicken

Flour – you will need some to coat the chicken before frying

Soy sauce – this sauce is made from fermented soya beans, and gives a salty, umami flavor to your favorite food.

Pure Liquid Honey – honey will add stickiness and sweetness to the sauce

Gochugaru – Korean chili spice that will give the sauce the right spiciness and uniqueness. I recommend using Gochugaru flakes instead of powder.

Sesam seeds – they have a nutty, sweet flavor and nice texture.

Tomato paste/tomato concentrate –  Tomato paste is a thick cooking concentrate made of blended tomatoes. It’s not the same as tomato puree or tomato passata!

Apple or Rice vinegar – I recommend using apple cider vinegar, but if you have rice vinegar you can use it in this recipe as well.

Rice noodles or rice – this time I strongly recommend using rice noodles, it just goes perfectly well with sticky chicken pieces. But if you don’t have rice noodles, you can substitute them with other types of Asian noodles or rice.

Chives – this type of herb will perfectly emphasize the taste of the chicken.

Salt and pepper – Salt enhances flavor and pepper adds flavor. How much salt and pepper you use depends on your individual preferences.

STEP 1

Mix soy sauce, liquid honey, tomato paste, vinegar, Gochugaru, and water. Stir until all the ingredients are well combined and the sauce is smooth. Note that tomato paste/ tomato concentrate takes the longest to combine with other ingredients. Now it’s time to prepare chicken breasts!

STEP 2

Cut the boneless and skinless chicken breasts into small pieces, sprinkle with salt and pepper, and dredge in flour. Dredging is a way to coat food in flour. Heat the oil in the pan. Carefully place the chicken pieces in the pan and fry for a few minutes until ready.

STEP 3

  1. Now it’s time to use ginger. Take a piece of ginger and peel the skin off it. You can use the side of a teaspoon to scrape the skin from ginger root. Grate it with a handheld grater or on the small holes on a cheese grater. If you don’t have a grater, use a knife to chop the ginger.
  2. Peel the garlic cloves and grate them. You can also chop them finely with a knife.
  3. When the chicken pieces are almost cooked, make some space in the middle of the pan and add the ginger and garlic. Fry the ginger and garlic for about 30 seconds, then mix everything with the chicken.

STEP 4

Pour the previously prepared sauce into the fried chicken and spread it evenly over the entire pan. Cook over medium until the sauce thickens. It will take a few minutes. Finally, add the sesame seed and distribute it evenly.

STEP 5

You can serve chicken pieces with rice noodles or rice. First, cook the rice noodles or rice according to the instructions on the package. Then add the rice noodles or rice to the pan and mix well with the chicken pieces and the sauce. You can also add chopped herbs. I often use fresh chives.
